Gluten-Free Zucchini Coins
This is an easy idea for when you are entertaining and looking to serve something new, fresh, and light. Did I mention this is gluten-free?
- 1 Medium Sized Zucchini
- 1/2 Box Olivia’s Gluten Free Garlic Croutons
- 1 Large Egg
- 1/3 Cup Olive Oil
- Salt to taste
- Dill (Garnish)
- Bleu Cheese (Optional and may want to avoid if you are trying to avoid gluten all together)
Slice zucchini into coins (no bigger than 1/2 inch). In a small bowl whisk egg. In medium bowl pour in croutons that have been blended into crumbs. Preheat large pan with olive oil to medium-medium high heat. While the pan is heating up, dunk the zucchini coins in egg and then coat in crumbs. Repeat until all coins are coated evenly. Place 5 -7 coins in hot oil:
Flip after about 1 1/2 – 2 minutes of cooking and let cook another 2 minutes or when the crumbs are golden brown.Remove from pan and place on plate with paper towel to soak up excess oil. Repeat until all coins have been cooked. Sprinkle with salt. Garnish with fresh dill and serve with crumbled bleu cheese (optional).
