Red, White, and Bleu Stuffed Peppers

Ingredients: 2 Large Red Bell Peppers cored, tops removed 1 LB Ground Turkey 1/2 Cup Olivia’s Croutons, crushed plus more for topping 1/2 Cup Bleu Cheese Crumbles 1 Cup Cherry Tomatoes 1 Small Onion, diced 2 Cloves Garlic, minced 4 TBSP Olive Oil Salt and Pepper to taste Instructions: Preheat Oven 420 degrees. In a pan saute olive oil, diced onion, minced garlic, and salt and pepper until tender, remove from heat. In a medium mixing bowl add turkey burger, onion/garlic mixture, tomatoes, Olivia’s Crushed Croutons, bleu cheese, and salt and pepper. Stir until mixed evenly. Stuff hollow peppers with turkey burger mixture, top with crushed croutons, and place in lightly greased baking pan. Cover with aluminum foil and bake for 40 minutes or until meat is cooked through and peppers are tender. Remove from oven and let rest for about 5 minutes before serving.
