Carrot Soup with Olivia’s Butter & Garlic Croutons

Carrot Soup

Our cream-style carrot soup—featuring aromatic notes of ginger and garlic—topped with our famous Butter & Garlic croutons is a great starter to any meal.

Yields: 4 servings


  • 4 Tbsp butter
  • 1 cup chopped onion
  • 4 cloves chopped garlic
  • 1 Tbsp chopped ginger
  • 4 cups grated carrot
  • 1 quart chicken broth
  • Salt and pepper to taste
  • Olivia’s Butter & Garlic Croutons
  • Fresh chopped parsley


  1. Sauté onion in melted butter until soft.
  2. Add garlic and ginger and stir a few moments.
  3. Add carrot and chicken broth and simmer about 30 minutes until carrot is tender.
  4. Puree with a hand blender and season to taste with salt and pepper.
  5. Garnish with chopped parsley and top with Olivia’s Butter & Garlic croutons. Yum!
