Panzanella Salad With Organic Garlic and Herb Croutons

Yields: 4 servings

Ingredients

  • 2 cups of Olivia's Garlic & Herb Croutons
  • Heirloom cherry tomatoes
  • Chopped cucumbers
  • Yellow peppers
  • Thinly sliced red onion
  • Pitted Kalamata olives (or capers)
  • Fresh mozzarella
  • Fresh basil
  • Vinaigrette Dressing

Instructions

  1. Add 1 box or 2 cups of Olivia's Garlic & Herb Croutons and toss with dressing.
  2. Allow to rest in refrigerator for half an hour to soften croutons.
  3. Mix together heirloom cherry tomatoes, chopped cucumbers, yellow peppers, thinly sliced red onion, pitted Kalamata olives (or capers), fresh mozzarella, and fresh basil, and add to softened croutons.

Vinaigrette Dressing

  • 4 tablespoons red wine vinegar
  • 2 tablespoons water
  • ½ cup extra virgin olive oil
  • 1 large clove garlic, minced
  • Pinch of salt and fresh ground pepper to taste
  1. Combine ingredients and let stand for flavors to blend.
